ears of grilled corn

This delicious combination of Mexican spices add a wonderful flavor to corn on the cob. While the flavor is complex, this recipe is quick and easy to create. Once the corn is grilled to perfection, you will be sure to impress your guests with this tasty summer side dish.


  • 2 cloves of garlic, minced
  • 1 tsp mustard
  • 1/4 C lime juice
  • 1/4 C olive oil
  • 2 tsp chopped cilantro
  • 2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp agave nectar or honey
  • 1/8 tsp cayenne pepper
  • Salt & pepper to taste
  • 4 ears of corn, shucked and cleaned


In a small bowl, whisk together garlic, mustard, lime juice, olive oil, cilantro, cumin, chili powder, agave nectar, and cayenne pepper. Season to taste, and adjust the balance as desired.

Brush the sauce over each ear of corn, then wrap ear in aluminum foil. Cook on a very hot grill, turning occasionally for 30 min.

Just before serving, open the foil and brush the corn again with the remaining mixture or butter. Serve immediately.
