Recipes To Make with Leftover Halloween Pumpkins

During Halloween, one thing you can never forget is pumpkins. From pumpkin picking to carving jack-o'-lanterns, they are a big part of the Halloween tradition. But, sometimes, we overlook the fact that these annual fruits are edible.

Why not use them for some delicious pumpkin recipes? Below are some recipes to try with your edible Halloween décor:

Roasted Pumpkin Seeds

One of the easiest ways to recycle your pumpkin is to roast its seeds. Once you have carved your pumpkin and separated the seeds from the pulp, dry them completely. Season the pumpkin seeds with some sugar or cinnamon and bake them. You can also wok-fry them with melted butter, salt, pepper, or any other seasoning you desire for the perfect snack or garnish your favorite soup.

Pumpkin Puree

Another simple way to use leftover Halloween pumpkins is to make your own puree. Roast or steam the flesh from the pumpkin, toss them in a food processor, and blend until smooth. You can also use a masher, do it by hand, and then refrigerate the puree in an airtight container or freeze for later use. It can be used for many other tasty pumpkin recipes like soup, pudding, and muffins.

Classic Pumpkin Pie

Everyone loves a classic pumpkin pie, and you can easily make one with your leftover jack-o'-lantern! Use your homemade pumpkin puree and add the rest of the ingredients for the filling: eggs, milk, sugar, and spices. Modify the crust by using whole-grain flour to make it healthier. Top the freshly baked dessert with some whipped cream, maple syrup, or ice cream and share with your family while celebrating the holidays.

Pumpkin Curry

If you want a hot, savory meal instead, you can make some pumpkin curry. Sauté some garlic and onions and then add the pumpkin puree, curry, coconut milk, and any other vegetable you'd like to put in, such as potatoes or broccoli. Add some warm spices and serve with rice or bread. You can also add meat to this recipe or enjoy it as is.

I have very little experience working in a yard/garden but I absolutely love looking at your ads online ~ perhaps some day in the future it will happen for me… so glad I’m on your mailing list!
